Situated in the former North Brewery location, Trillium offers a modern British dining experience characterized by a vibrant and laid-back atmosphere. Michelin inspectors praised the restaurant's fluid menu, which features appealing snacks, small plates, and sharing platters. Signature dishes include the Trillium milk loaf served with malt vinegar and chicken fat, and a succulent Tamworth pork chop accompanied by a light salsa verde and manchego cheese. The restaurant's impressive wine list was also commended for its variety and depth.
