The Food Safety and Standards Authority of India (FSSAI) has intensified its efforts against unsafe food practices by issuing fresh directives to states regarding the illegal use of artificial ripening agents. In a directive dated April 16, 2026, FSSAI reiterated that the use of calcium carbide, commonly referred to as 'masala', is strictly prohibited due to serious health risks including vomiting, skin ulcers, and respiratory issues. The regulator has also flagged the misuse of ethephon solutions, emphasizing that direct contact with fruits is banned. To enforce these regulations, state food safety commissioners are instructed to enhance inspections across mandis, storage units, and distribution hubs. Officials are equipped to use strip paper tests for detecting acetylene gas in ripening chambers.
